What are Pre-Gelatinized Starches?

Pre-gelatinized starches are native or modified starches that have undergone pre-cooking, giving them the ability to absorb water in cold conditions. This property allows these starches to provide viscosity and stability to products without requiring cooking or high temperatures.

This process offers greater convenience in production, optimizing manufacturing lines while preserving product characteristics such as flavor, odor, texture, and color. It is also useful in the production of pre-mixes, eliminating the need for scalding during preparation.

They can be obtained exclusively through physical methods, with no chemical modifications—ideal for clean label products—or through chemical modification processes for applications requiring greater resistance and stability.

Pre-gelatinized starches are highly versatile and can be utilized across various industries. In the food industry, they are used to enhance gel characteristics, texture, resistance, creaminess, and shine, and also serve as thickeners, clarifiers, and stabilizers.

Industrial Line
